Caviar is fish eggs consumed as food. Caviar is a delicacy that which consumed as a garnish or spread. Traditionally, caviar solely refers to roe from wild sturgeon in the Caspian and Black Seas (Beluga, Ossetra, and Sevruga caviars). Depending on the country, caviar may also refer to the roe of other sturgeon species of fish like salmon, steelhead, trout, lumpfish, whitefish, or carp.
